I would be great if you can add new pages with the option to add it to the menu/drop down menu

You can technically do this anyway, you just have the make the menu editable as well and add the new page link to the menu

Just been trying to do this on vitalityplanet.co.uk but can't create a link??? The system just won't let me do that??
Any ideas why?

You should enable the 'link' tool in the toolbar first - you can do this here:
Account > My account > Update rich text editor options
